Bouchon Bakery: Witch Hats

These Halloween treats are decadent versions of s’mores with a Speculoos cookie brim (delicious on it’s own), piped homemade marshmallow for the point and a chocolate covering to give them a wicked look.

As I mentioned the Speculoos cookie bases are wonderful. They are thin and have a nice snap to them. I made baby witch brims with 2″ round and scalloped cutters. Then I made the homemade marshmallow, the same recipe as for the Easter marshmallow eggs but instead of putting them in the egg mold, the marshmallow is piped onto the cookie. Before putting the marshmallow in the piping bag, I added one drop of green coloring and mixed in it a little bit so it had a streaky appearance. Anything witch-related automatically reminds me of my favorite musical Wicked so these were “greenified” Elphaba witch hats.

For the piping technique, I pulled upward to lengthen the marshmallow but it must be done gradually or else you’ll end up with an unstable cone and it will lean or droop. By pulling up very slowly, creating a wider, fatter cone shape, it held up better. I live in a very dry climate so the marshmallow began to set very quickly. Note: this recipe will not work in rainy weather. The marshmallow will not whip up to a stiff consistency in the mixer and it will not hold it’s shape when piping. It will have a spreadable consistency.

The last step is enrobing the marshmallow and cookies in tempered chocolate. Let me just say, of all the pastry techniques I’ve learned on my own and in school, I’ve never mastered tempering and after this, still haven’t. Nevertheless, cutting into the witch hats and seeing the swirled green marshmallow surprise was fun. These mini s’mores taste delicious with the crisp cookie, fresh marshmallow and chocolate coating. I didn’t like the marshmallow on its own when we made the eggs, but here the chocolate provided nice contrast. If I could get the tempering right, maybe by April, I’d coat the eggs in chocolate. Mmm.
