There’s nothing like fresh scones slathered with butter and jam, so we made sure to get our fill of the classic teatime treats during our recent trip through the Irish countryside with our friends from Tourism Ireland and Bake from Scratch Magazine. We traveled south from Dublin to County Cork, the culinary capital of Ireland, to spend the day at the renowned Ballymaloe Cookery School. We toured the sprawling 100-acre organic farm and made scones in one of their four full-service kitchens.

Savory Soufflé from The Cook’s Atelier

I took a two-hour train ride from Paris to Beaune, a town is situated in the wine-making region of Burgundy. I made the weekend trip to take a day-long cooking class at The Cooks Atelier. The charming school is run by mother-daughter team Marjorie Taylor and Kendall Smith Franchini. There’s a wine shop on the ground floor, kitchen on the second and dining area on the third. It’s a truly idyllic place and I had so much fun prepping and eating a menu of French classics. One of my favorite dishes was the comforting, savory cheese soufflé.

Mini Chocolate Chip Hot Cross Buns

It wouldn’t be Easter without a batch of hot cross buns. On my recent trip to New Zealand, I tried a chocolate version from Miann Patisserie, that had chocolate chips and raisins incorporated throughout. I wanted to play up the chocolate more so I omitted the raisins. There is cocoa in the dough to give it a rich color and LOTS of mini chocolate chips throughout. The base recipe comes from my go-to, Bouchon Bakery cookbook. If you prefer classic hot cross buns, I highly recommend the original recipe. It’s fantastic. Chocoholics, enjoy the below!
